祁门红茶
祁红与印度高级红茶主要成分比较(占干物%),祁红1级、2级:咖啡碱分别为3.99%和3.81%;印度大吉岭碎橙黄白毫、阿萨姆花碎橙黄白毫分别为2.84%和3.43%。黄酮类化合物:祁红1级、2级,分别为8.92%和9.77%;印度大吉岭碎橙黄、花碎橙黄分别为10.68%和16.24%。祁红毛茶加工,筛分精细,使外形整齐美观,内质一致。最后复火也很考究,把茶叶盛入袋内,避免烟焦;烘笼盖闭,调和温度;低温长烘,吸回香味,降低芳香油挥散。因此茶叶香气能发展到最高峰,成为形质兼优的名茶。
